Open-Face Egg Salad Sandwich

This egg salad brings back childhood memories . . . my parent's used to make egg salad and make bunny shapes with it, so my brother and I would look forward to having this fun looking salad. 

I remembered the salad this week and decided to make an open sandwich out of it . . . it turned out to be filling and delicious!


La ensalada de huevo me recuerda a mi infancia . . . mis papás nos la preparaban y le daban forma de conejo en Pascua, por lo que mi hermano y yo pedíamos esta ensalada divertida de niños.

Me acordé de ella esta semana y decidí hacer un sandwich abierto . . . quedó delicioso!

Egg Salad Sandwich
Serves 2-4 (depending how hungry you are, but they turned out to be quite filling)
4 eggs, hard cooked 
2 tablespoons Veganize (or mayonnaise of choice)
1 tablespoon Dijon mustard
2 tablespoons chopped fresh chives
salt and pepper
4 sliced whole wheat bread, toasted

Crack and peel the eggs. Place in a big mixing bowl. Add Veganize, mustard, chives, and a couple pinches of salt and pepper. Mash with a fork until well combined. Adjust seasonings to taste. 

Spread some of the salad mixture on each slice of bread and sprinkle with fresh cilantro or parsley.

Sándwich de ensalada de huevo
Sirve 2-4 (dependiendo de cuánta hambre tengas, pero resultó ser bastante llenador)
4 huevos duros
2 cucharadas de Veganize (o mayonesa de tu elección)
1 cucharada de mostaza Dijon
2 cucharadas de cebollín fresco
sal y pimienta
4 rebanadas de pan integral o germinado, tostado

Pelar los huevos. Colocar en un tazón grande. Añadir Veganize, mostaza, cebollín, sal y pimienta. Machacar con un tenedor hasta que todo esté bien mezclado. Ajuste los condimentos al gusto.

Poner un poco de ensalada en cada rebanada de pan y espolvorear con cilantro o perejil fresco.
