An Extraordinary Cucumber Sandwich

This is one of my go-to weeknight dinners, it's light and fresh so you won't be tossing and turning all night trying to digest a heavy dinner.

Una de mis cenas favoritas entre semana, es ligera y fresca por lo que no vas a andar dando vueltas en la cama toda la noche tratando de digerir una cena pesada.

An Extraordinary Cucumber Sandwich
Serves 1
1 slice of sprouted grain bread, toasted
1/2 avocado, mashed
1 teaspoon Tahini (recommended Kevala, at iHerb or Amazon)
1 medium english cucumber, sliced
Salt, pepper, and paprika to taste

Spread avocado on top of toasted bread and drizzle with tahini. Top with sliced cucumber and sprinkle with salt, pepper, and paprika to taste. Enjoy!


Versión en Español
Para 1 persona
1 rebanada de pan germinado, tostado (HEB zona de congelados)
1/2 aguacate, machacado
1 cucharadita de Tahini (recomendado Kevala)
1 pepino mediano inglés o medio pepino normal, rebanado (en Costco compro el inglés, la diferencia es que tiene menos semillas y una cáscara más delgada)
Sal, pimienta y pimentón

Untar pan con aguacate machacado y rociar con tahini. Agregar las rebanadas de pepino y espolvorear con sal, pimienta y pimentón al gusto. ¡Disfruta!
