Sometimes you need a colorful martini to celebrate just because it's a Saturday night . . . and in an attempt to make things a bit healthier I made hibiscus martinis! Replacing all the fake sugary stuff with real iced tea, lemon and agave nectar.

Minty Lemon-Limeade
1 cup water
1/2 cup organic cane sugar
1 cup fresh mint leaves
2 lemons, juiced
8 limes, juiced
water or sparkling water according to taste

Make the minty simple syrup by bringing the cup of water and sugar to a boil, cook for approximately 3 minutes or until sugar is dissolved. Turn off the heat and add the mint leaves. Let the syrup cool down and be infused with the mint (let rest for about 30 minutes)

In a large pitcher combine the lemon and lime juices, the mint simple syrup (discard mint leaves), and either sparkling or plain water according to taste.
