Rustic Flatbread Pizza

Last weekend we went to an Italian restaurant with the hopes of finding a hearty pizza, turns out pizza was not even on the menu . . . soo as I was surfing the web for inspiration, I found a great recipe for flatbread and decided to make a rustic pizza . . . craving satisfied!

El fin de semana nos quedamos con antojo de pizza y, mientras buscaba inspiración para la comida, me topé con una receta para hacer "flatbread" (un tipo de pan sin levadura, que queda casi como galleta) . . . y se me ocurrió hacer una pizza más rústica que la de costumbre . . . antojo satisfecho!

A Parfait Breakfast!

So you have probably realized that I'm a sucker for blueberries . . . plump, colorful, delicious . . .  plus knowing that they do wonders for your bod . . . needless to say I was a goner from the first time I tried them . . . this is yet another way to have them for breakfast: natural yogurt + granola + blueberries

Spaghetti Squash

Looooove the simplicity and deliciousness of this dish! I have always wanted to try spaghetti squash, sadly it is nowhere to be found in any of the supermarkets in Monterrey, until . . . last Saturday!!! I went grocery shopping, as I always do on a fine Saturday morning, and to my surprise there were five (yes, only five . . . told you pumpkins and squashes don't usually show up around here) beautiful spaghetti squashes!! Of course, I couldn't wait to try them out . . .

Me encanta lo simple y delicioso de esta receta. Siempre había querido probar este tipo de calabaza, tristemente nunca hay en ningún super de Monterrey, hasta este sábado!!! Fui al super, como todos los sábados, y me topé con cinco (si, solo cinco . . . les dije que les hacen el feo aquí a las calabazas) calabazas espagueti!!! Por supuesto que me moría por probarla y fue entonces nuestra comida de hoy . . .

Giada's Pasta alla Formiana

I love watching Giada at Home on Food Network, she has that easy breezy way of making cooking look fabulous and effortless. Last week she made Pasta alla Formiana, she just mixes everything up in a baking dish and pops it in the oven, how great is that?  I tweaked it a bit so that it would better fit our taste and loved the results! Bon appetit!

Me encanta ver "Giada at Home" en el Food Network, tiene una cualidad increíble para hacer que la cocina sea fabulosa y fácil. La semana pasada hizo Pasta alla Formiana, solo mezcla todo en un pyrex y lo mete al horno, apoco no es genial? Cambié un poco la receta para que se asemejara mejor a nuestros gustos y me encantó el resultado. Bon appetit!

Eggplant Rollatini

A lot of people don't like eggplant, including my lovely mother. But I realized that it was due to fact that she was missing a crucial step in cooking this meaty vegetable: to generously salt the sliced eggplant and let it rest for 30 minutes or so in order to release its bitterness and to prevent the absorption of excess oil while pan frying it.

I'm glad to report that this dish made an eggplant lover out of mom!


A mucha gente no le gusta la berenjena, inlcuyendo a mi querida madre, pero me di cuenta que se debía a que se estaba saltando un paso muy importante para preparar esta verdura carnosita: hecharle sal a la berenjena cortada y dejarla reposar por aproximadamente 30 minutos, para que le quite su sabor amargo y para evitar que absorba mucho aceite al saltearla.

Me alegra informarles que esta receta le encantó a mi mamá!

Easy Frozen Mango Pie

This is an extremely easy dessert, plus it doesn't have any flour, refined sugar, eggs, or butter in it . . . I made a simple crust of walnuts and dates and filled it with chopped fresh mango and my favorite natural yogurt (for all the vegans out there, soy yogurt or even frozen yogurt would be an excellent substitute)

Este es un postre extremadamente fácil, y no tiene harina, azúcar refinada, huevos, ni mantequilla . . . la base está hecha de nuez y dátil, y el relleno de mango fresco y yogurt natural (para los veganos o intolerantes a la lactosa, un excelente substituo sería yogurt de soya)

Minty Lemon-Limeade

Minty Lemon-Limeade
1 cup water
1/2 cup organic cane sugar
1 cup fresh mint leaves
2 lemons, juiced
8 limes, juiced
water or sparkling water according to taste

Make the minty simple syrup by bringing the cup of water and sugar to a boil, cook for approximately 3 minutes or until sugar is dissolved. Turn off the heat and add the mint leaves. Let the syrup cool down and be infused with the mint (let rest for about 30 minutes) 

In a large pitcher combine the lemon and lime juices, the mint simple syrup (discard mint leaves), and either sparkling or plain water according to taste.

Delicious little patties of potato and feta cheese, with a touch of fresh chives and lemon zest. A simple way to change your lunch up a bit. Pair them with a fresh pea or broccoli soup, or a spinach salad for a complete meal!

Pequeñas croquetas de papa y queso feta, con un toque de cebollín y limón amarillo. Una manera simple de cambiar el típico puré de papa. Combínalas con una sopa de chícharo o bróccoli, o con una ensalada fresca de espinacas para una comida completa!

Open-Face Egg Salad Sandwich

This egg salad brings back childhood memories . . . my parent's used to make egg salad and make bunny shapes with it, so my brother and I would look forward to having this fun looking salad. 

I remembered the salad this week and decided to make an open sandwich out of it . . . it turned out to be filling and delicious!


La ensalada de huevo me recuerda a mi infancia . . . mis papás nos la preparaban y le daban forma de conejo en Pascua, por lo que mi hermano y yo pedíamos esta ensalada divertida de niños.

Me acordé de ella esta semana y decidí hacer un sandwich abierto . . . quedó delicioso!
