This dish is so good I wish I had leftovers for today . . . it's insanely easy to put together and it won’t weigh you down on a busy afternoon. Gluten-free quinoa or brown rice pasta makes it easier to digest than regular pasta; it is worth to splurge for one of those . . . your flat tummy will be grateful.

Este espagueti es tan rico que me hubiera encantado quedarme con sobras para volver a comer hoy . . . es increíblemente fácil de hacer y no cae pesado (no vas a andar pestañeando en la oficina en la tarde). Pasta de quinoa o de arroz integral sin gluten hacen que sea más fácil de digerir que la pasta común, vale la pena probar una de estas opciones . . .

Veggie Lentil Mole Surprise

This dish was inspired by an awesome meal at one of my favorite restaurants in Austin, North by Northwest, although the place is not vegetarian their few veggie options are pure bliss . . . when I came back home I recreated it and changed it up a bit, including the addition of a creamy mole sauce that makes the lentils shine!

Este platillo está inspirado por una comida increíble en uno de mis restaurantes favoritos en Austin, North by Northwest, aunque el lugar no es vegetariano sus pocas opciones son deliciosas. . . regresando a la ciudad lo traté de recrear y lo cambié un poco para incluir nuestros ingredientes preferidos, incluyendo una salsa de mole que hace brillar a las lentejas!

Mountain Biking Smoothie

Smoothies are an awesome breakfast option, they give you energy and nutrients and fuel you up for a busy or sporty morning!!! Our favorite mix when we go biking: 1 ripe banana, 1 cup almond milk (soy or rice milk also work), and 1 tablespoon almond butter (you can substitute with organic peanut butter or any other nut butter), blend it up and be prepared to be invincible!

Los smoothies son una excelente opción para desayunar, te dan energía y nutrientes en una mañana de alto rendimiento. Nuestra combinación favorita para ir a la montaña es: un plátano maduro, 1 taza de leche de almendras (soya y arroz también son ricas) y 1 cucharada de crema de almendras (se puede sustituir con crema de cacahuate, orgánica, sin azúcar, ni aditivos artificiales), licúa y prepárate para ser invencible!

Sometimes you just need a plain old burger to satisfy a salty, and somewhat sinful?, craving . . . and I've been craving a burger and fries for a week now . . . so I made portobello burgers today, sans the guilt!!!! 


De plano a veces necesitas una hamburguesa para satisfacer un antojo salado, y un poco pecaminoso? . . . y como toda la semana se me han antojado hamburguesas y papas, hoy hice hamburguesas de portobello . . . sin la pecada!

Easy Peasy Green Tostadas

For dinner I prefer lighter meals, helping my bod unwind at the end of the day and not put as much stress on the digestive process. These tostadas are the bomb! They are full of flavor and nutrients, and you can whip them up in under 5 minutes . . . what else can you ask from your dinner?

Para cenar prefiero preparar comidas más ligeras, ayudando a mi cuerpo a relajarse al final del día y no poner tanto estrés en el proceso digestivo. Estas tostadas son la neta! Deliciosas, llenas de nutrientes y las puedes hacer en menos de 5 minutos. . . ¿qué más le puedes pedir a tu cena?

Spring Time Carrot Soup

The heat has been creeping up on us, with highs of 95° our apartment is starting to feel like a small oven . . . don't get me wrong, I love the heat and sunshine and bathing suit season!!! The lovely warm weather just means that I am now craving lighter and fresher foods . . . and bit of air conditioner!

El calor llegó, con 35° nuestro depa empieza a sentirse como un pequeño horno . . . pero sin embargo, me encanta el calor, el sol y el poder ir a la alberca!!! El precioso tiempo cálido solo significa que ahora se me antojan comidas más ligeras y más frescas . . . y un poco de aire acondicionado!

Chili no-dog & quinoa-corn muffins

Today we ate a delicious black bean & soy crumble chili with red quinoa and corn muffins  . . . can you say comfort food?

I made quite a bit of both, was kind of hungry apparently . . . so I got enough leftovers to feed 5 hungry chili-loving people . . . this will probably serve 6-8 (or two people for a whole week but, unless you really like chili, I would suggest halving the recipe)

Hoy comimos chili de frijoles negros y soya, hice muffins de maiz y quinoa para acompañar . . . delicioso!

Aparentemente tenía mucha hambre . . . me sobró suficiente como para alimentar a 5 hambrientas personas más . . . esta receta es entonces para 6-8 personas (o como comida para toda la semana para dos personas, pero a menos que te encante comer chili, sugiero hacer la mitad de la receta)

Beginnings

I fell in love with cooking when I became a vegetarian, I would have never imagined that I was going to discover so many new flavors and textures when I changed my eating habits . . . by deciding to try out a healthier diet I was suddenly in need of cooking for myself in a not-so-veg-friendly city and some confused meat-loving parents, and thus my passion for cooking began . . . I’ve grown so much since then, and so have my recipes. . . now my mom asks me for cooking tips, my dad is trying to eat healthier, my friends love our veggies, and I have evolved from experimental cooking with no time limit (lots of messing up in my mom’s kitchen, maybe an explosion or two of red sauce splattered all over the ceiling), to planning the week’s menu on Sunday (in my own red kitchen, yeah baby!) in order to feed my hungry husband and I as we rush from the office to our home for lunch. We are lucky enough to eat together everyday, so I try to make it special . . . and a delicious meal that takes your mind off work for a bit is definitely a must!
